The transformation from eating anything and everything whenever we desired to following a disciplined, whole-foods, nutrition-based diet began out of necessity, as these changes often do.
Early in our marriage, we were busy running a successful, growing business. I traveled frequently, often eating out morning, noon, and night, sometimes four or five days a week.
Late-night meals also became normal. This schedule continued for decades.
Gabi and I enjoyed trying new restaurants locally and while traveling, then recreating favorite dishes at home and on weekends. Yet much of the food was processed, made with seed oils and preservatives rather than from scratch. And sweets? Yes, there were plenty of sweets, chocolates, and desserts. For special occasions, I often ordered a custom two-layer, eight-inch round cake from Publix.
These cakes might be chocolate cake covered with both rich fudge icing and chocolate ganache, or New York-style cheesecake with lemon buttercream icing and a blueberry or raspberry glaze—sometimes all combined. They were delicious at the time, but I half-joke that one bite could send someone into a glycemic coma. The amount of sugar I consumed during these moments was simply too much.
I have read that many health circumstances we face later in life are often 20–30 years in the making. As the years passed, I encountered my first health issue, at least partly connected to my diet and lifestyle.
Gabi was also seeing changes in her metabolic markers, so we began adjusting. Within a few years, additional problems emerged and worsened for me, prompting an even more focused wholefoods, low-carb diet, free of unhealthy ingredients. Fast food, meat-lovers’ pizza, BBQs, cheeseburgers, and desserts were now all off the table (pun intended).
Thankfully, our bodies have an incredible capacity to heal when given the opportunity. My healing continues, and I have learned much about physical, metabolic, and spiritual health. We will explore spiritual health more deeply at another time, because I believe complete healing comes through the integration of body, mind, and spirit.
In this blog, however, we will focus primarily on the foods we eat, the drinks we consume, and the nutritional and metabolic effects of diet on our overall well-being, including some cool recipes. The adage remains true: we are what we eat—and drink. Sleep and rest are also essential, and for a long time, all these areas were, at best, inconsistent for me. Stay tuned for more content.
